Commercial cinnamom trees, of which the inner bark is used, are Ceylon cinnamon (Cinnamomum verum J.Presl), Chinese cassia (Neolitsea cassia (L.) Kosterm.), Padang cassia, Indonesian cinnamon (C. burmanni (Nees & T.Nees) Blume), Vietnamese cassia (C. loureiroi Nees) and Malabar cinnamon (C. citriodorum Thwaites).
Of the 2 types mentioned, the thin one refers to Ceylon cinnamon, the 'true cinnamon', which is thin, in serveral layers and easy to powder, and has a more delicate flavour. The thick one refers to the 'cassia' from the other species, which is thick, hard to crush and has less flavour.
Cinnamomum tamala is not used for the bark, but for the leaves.
