(med) Brewer's Yeast or Beer Yeast, Saccharomyces spp (Drungtso 1999, Phrin Las 1987). Yeasts are single-cell fungi or moulds. The most common top-cropping brewer's yeast, S. cerevisiae, is the same species as the common baking yeast, but different strains.
